When a friend requested something ‘chocolatey’ for his recent birthday cake, I allowed my imagination to get a little carried away with me. An opera cake (From Wikipedia):
Opera cake is a French type of cake. It is made with layers of almond sponge cake (known as Joconde in French) soaked in coffeesyrup, layered with ganache and coffee buttercream, and covered in a chocolate glaze.
The problem being with this is that quite a few people don’t like coffee in their cakes. What to do?! My answer came in the form of a recipe for a egg white, gelatin set, toffee mousse I’ve been meaning to try.
Layering the caramel syrup soaked, light Joconde sponge with layers of Chocolate Ganache and Toffee Mousse gave my final result. After taking the photos I decided to add some Caramelized, Chocolate Hazelnuts across the top. Alas, I forgot to take any more snaps so you shall have to take me at my word! Next time maybe……
