Nougat & Caramelized Banana Baked Alaska. Sponge Finger base and Blueberry & Raspberry Italian Meringue.
I like the odd frozen desert ever now and again but this one was quite a new thing for me. Normally my cold puds consist of me freezing whatever leftover custard or meringue I have after I’ve finished a cake! Still, this was worth the effort I think. The sponge fingers were a joy to make and were eaten so quickly that another batch had to be made for the Alaska. The Parfait in the middle contained crushed Hazelnut Nougat and caramelized Banana and the Meringue was colored and flavored with freeze-dried fruit powder. My new favorite ingredient! Inspired by a Heston Blummenthal recipe from his Fat Duck cookbook.
